Meet Chef Himanshu Pandey – Executive Sous Chef, Gymkhana Las Vegas
Acclaimed Indian chef Himanshu Pandey joined Gymkhana Las Vegas at ARIA Resort & Casino, part of MGM Resorts International, as Executive Sous Chef, effective October, 2025.

Gymkhana Las Vegas is the international extension of London’s iconic Gymkhana, a globally celebrated Indian restaurant awarded two Michelin stars, and is renowned for its refined and contemporary interpretation of traditional Indian cuisine.
With a strong foundation in Indian culinary heritage and extensive experience in luxury hospitality, Chef Himanshu Pandey plays a key role in maintaining Michelin-level standards, leading kitchen operations, and ensuring excellence in menu execution. Pandey’s move to Vegas and joining Gymkhana marks an important milestone in his international culinary journey and reflects the growing global recognition of Indian chefs. His expertise was further showcased during the 2025 Las Vegas Grand Prix, where he collaborated with 2-Michelin-star Chef Sidharth to deliver high-volume event catering for Formula 1 weekend.

Prior to his move to Las Vegas, Pandey held the position of Executive Chef at RAA in New York City, where he drove the development of the company’s culinary identity and managed complex kitchen infrastructure.

Chef Himanshu’s journey from the hills of Uttarakhand, India, to the global culinary stage reflects dedication, passion, and a commitment to preserving and evolving Indian gastronomy.
Pandey’s professional journey includes leadership roles at some of the world’s most prestigious hospitality groups: including Hyatt Regency, Gurugram; Marriott International – Sheraton Grand Palace Indore; Radisson Blu, Indore; Hilton Hotels & Resorts, Jaipur. Additionally, Pandey has served as personal chef to numerous celebrities in India including cricketer Kapil Dev, Bollywood star Salman Khan.
A graduate of Delhi University and the prestigious Institute of Hotel Management, Pusa, New Delhi, Pandey’s technical foundation is backed by significant industry accolades. He won the Indian level of the F&B Masters (2016) and placed third in the Asia Zone competition held in Thailand.
